Level IV: Spotlight Series
Fee: $675
Prerequisite: In order to be eligible to attend the Spotlight Series, all attendees must be have completed Levels I, II and III.
Synopsis: In the summer of 2009, two Summer Institute Spotlight Series will be offered. Each Spotlight Series session is created by a college or university that has previously hosted a Basic, Advanced or Mastery Level Summer Institute. The partner site develops the curriculum and supporting materials.
This summer Orlando Culinary Academy will offer its first Spotlight Series focused on baking & pastry - starting with an overview of the history and culture of popular baked and dessert items and then expanding into the execution of the discussed items. An emphasis will be placed on technique, flavoring and most importantly the teaching methods and best practices to employ with students. The Culinary Institute of Charleston will also offer its first Spotlight Series. This program will explore the social and cultural issues of food sustainability through the farmer, fisherman, and livestock producer. The course will then tie in their direct correlation to the chefs that cook the food and the customers that eat it.
